Hillcrest Dining
 
Ask any resident, staff member or even guests about the dining experience at Hillcrest and you'll hear them rave about the culinary wizardry of Executive Chef Christian Laire. Born in Lyon, France, the soft-spoken chef knew from the time he was a young boy that he wanted to be a chef. Educated in the French system of culinary education known as Culinary Aptitude, Chef Laire worked in several restaurants, including his own and in many different countries.

Disenchanted with the lack of connection in restaurant operations, Chef Laire welcomed the opportunity to join Hillcrest. He enjoys that his work is mission-driven and has purpose. He has a relationship with the residents; he sees them every day, they give him feedback and he can see the results of his efforts in the kitchen.
 
     
  Chef Laire's philosophy on cooking mirrors Hillcrest's concept of total health and wellness; "Balance is an important aspect of cooking and of life. As a chef, you need to not overpower the natural flavor of your food and allow its true taste to come through." Recipes are a guideline but a true chef cooks by taste, color, scent and the look of the food as well. The transformation of ingredients into a meal that makes people happy is magical."  
     
  Special Events  
  The Meeting House at Hillcrest is a perfect venue to host mixers, business gatherings, retirement parties, luncheons, holiday celebrations, weddings, and  graduation parties.  The room accommodates up to 400 guests (auditorium style) and 50 to 272 guests for fine dining.

  The Meeting House at Hillcrest features a wide variety of entrees for both formal and casual events. Dining services can include either self-service buffets or formal table-service.  
     
  Our Catering Services Team, led by Chef Christian Laire, will answer your questions and seek to accommodate personal preferences and requests, including menu items, dessert and beverage selections, and the ambiance to ensure your event is a complete success.

Chef Christian’s...
Orange Mandarin Sauce

This is an excellent sauce for chicken, fish, shrimp or white meats, especially when combined with fresh fruits such as mango, raspberries, papaya or pineapple. Cook the meat and top with your favorite fruits and the hot orange mandarin sauce.

½ cup frozen orange juice concentrate
½ tsp crushed red pepper
1½ cups water
1½ tsp soy sauce
1 cup orange marmalade
½ cup rice vinegar
1 tbsp finely chopped peeled ginger
Pinch of cornstarch

Combine all ingredients above in sauce pan except for the starch. Bring to boil for a couple of minutes. Mix cornstarch with a little water and add to boiling sauce. Bring to boil again and pour over cooked meat.
